Fat Cakes

Ever watch iCarly? We have two daughters so we are big iCarly fans around here! This recipe reminds me of the character named “Sam”! One of my favorite lines she ever said was “Momma KNOWS her Fat Cakes”, no clue why but it always cracked me up!

 

Ingredients & Instructions:
1 1/2 C Soured Milk*
*Tip>>>>To *sour* your milk, add 3 T Vinegar to your milk and let it sit for 10 minutes. It will begin to bubble a little…
2 1/4 C Flour
5 T Sugar
2 t Baking Powder
1 t Baking Soda
1 t Salt
3 Eggs
4 T Melted Butter
2 t Vanilla

*Sour* your milk, set aside.
Combine in medium bowl:
Flour
Baking Powder
Baking Soda
Salt
I whisk it a little bit here
In a smaller bowl, beat on LOW speed:
Soured Milk
Eggs
Vanilla
Melted Butter
Add the liquid mixture to the flour mixture and beat with an electric mixer on LOW speed until most of the lumps are gone, but don’t beat it too much!
The batter will be pretty thick. Let the batter sit for 10 minutes. Don’t move it, don’t touch it, don’t stir it! Leave it alone!
After 10 minutes, you will see bubbles in the batter, DO NOT STIR!
Spray an 11″ griddle with cooking spray.
DIP out 1/2 C portions of the batter onto the griddle. DO NOT POUR…I think this may be why these FATcakes are so fat!
Cook until bubbles appear on the topside of the FATcake and then flip ’em and finish ’em!
