Red pepper Parmesan Crusted Tilapia

(Makes 3 pieces) 

Breading:
3 Tbsp Bread crumbs
3 Tbsp Crispy Red Peppers
2 Tbsp Parmesan Cheese
1 tsp paprika
Grind together ingredients to make a breading is, place in shallow bowl.
In another shallow bowl, beat 1 egg with Juice from ¼ lemon(about 1tbsp )
Dip Tilapia filet in egg mixture coating both sides, then into breading. Press down in breading mixture to coat well. Turn filet over again press down into breading mixture to coat other side.
Place in baking dish or sided cookie sheet. I lined mine with no stick aluminum foil.
Bake at 400 degrees about 20 minutes or until fish is done.

Serve with a drizzle of lemon for flavor that really wows you.
