Cider-brined Bacon wrapped Pork Loin

cider brined bacon wrapped pork


1 pork loin, trimmed
2 # bacon
apple cider
salt and pepper
-cover pork loin in cider and let marinate for 2 days
-Lay bacon in a row on a piece of parchment paper making it the length of your pork loin
-Salt and pepper pork loin and lay on the bacon strips
-pull baon up the sides to meet the other half of the piece
-gently roll the pork loin over onto another parchment lined tray
-tuck in any bacon that didn’t make it
-cook at 400 degrees for 15-20 minutes until bacon is desired doneness ( I like crispy)
-turn oven down to 350 degrees and bake until internal temperature in the center is 145 degrees
