Creamy Kale and Eggs

kale and eggs

 

Ingredients
eggs 1-2 or egg substitute
Baby kale 2 cups
Greek yogurt ( I use Fage) 2 T
Shallot 3 T chopped
Olive oil two T
Parmesan cheese 1 T shredded or shaved
salt and pepper to taste

Add olive oil to skillet and set to med,add shallot and cook until translucent add kale and let it wilt, add the yogurt and mix it into the kale. Move it to one side of the pan and add eggs, ( I prefer scrambled but you can fry if you like). Once eggs are done plate and then top with the kale mixture and the cheese.
