Jamie’s Pork Roast

1 – 4 lb Pork Shoulder
¼ Cup Olive Oil
1 ½ TBS Sea Salt
1 ½ TBS Pepper
1 TBS Oregano
1 TBS Thyme
6 Cloves of garlic
Combine all but the pork shoulder into a food processor and pulse until a smooth paste is formed. 4-8 hours before cooking dry the roast, score the fat and rub the mixture all over the roast. Preheat oven to 500 degrees. Cook roast for 20 minutes at 500 degrees. Lower the temperature to 400 and cook until the roast reaches 140 degrees (Mine took about 40 minutes at 400 degrees). Allow meat to rest for 10 minutes.
