Roasted Sweet Potato Salad

Serves 2.
1 Small bag of Mixed Lettuce Leaves
¼ Cup Pine Nuts
1 Tomato
½ Spanish Onion
½ Medium Sweet Potato
½ Advocado
1 tabs Gourmet Italian Glaze & 2 tabs Balsamic & roasted garlic vinegar
Peel & cut the sweet potato into small cubes. Microwave for 3 mins and then pop into oven. Drizzle with Olive oil and bake until browned & tender. Oven at 185c (or Pan Fry in Olive oil turning occasionally until cooked.) Set aside to cool on paper towel.
Slice onion & Tomato and then dice into smaller pieces.
Put lettuce leaves, tomato, onion and pine nuts into serving bowl. Add cooled Sweet Potato and gently toss. Cut avocado and put on top. Drizzle with the glaze and add the Balsamic vinegar to taste. ENJOY.
