Mimas Melt In your Mouth Tiramisu

Super Easy!!! No Baking Involved!!!! Remember moderation!

Ingredients
3 Large eggs (or pasteurized egg substitute)
1 cup espresso or strong coffee (I used strong coffee) cooled
1/2 cup sugar
2 tbsp. Cognac or Brandy (I used Cognac)
8oz Mascarpone cheese
2 tbsp. Cocoa
20 Ladyfingers

Directions:
Combine 3 egg yolks, 1 tbsp. espresso/strong coffee, and cognac into a large bowl. Beat 2-3 minutes. Add mascarpone and beat another 3 to 5 minutes till smooth.
In another bowl combine egg whites and a pinch of sugar. Beat untill stiff peaks form. Gently fold into mascarpone mixture. (If using egg substitute skip this step and beat till fluffy)
Dip the ladyfingers in the espresso making them soft. Do a layer of ladyfingers on bottom, then mascarpone mixture, sprinkle cocoa, then ladyfinger layer again, then mascarpone one last time
Sprinkle top w cocoa till your liking.
The decoration on top is a squirt of whip cream and a partially melted dark chocolate Hershey kiss then cooled. Refrigerate at least 3 hours before serving.
Then devour and enjoy!!!
