LOW CARB, Mexicali Meatloaf

mexican meatloaf


1 lb ground chuck
1 lb regular Jimmy Dean sausage
1 egg
1 cup crushed pork rinds
1/2 (4.5oz) can diced mild green chilies (optional)
1/2 med onion
8 oz Monterey Jack cheese shredded- I only had about half the amount
3/4 cup salsa of your choice
2-3 cloves crushed garlic
2 tsp dried oregano
2 tsp grd cumin
1 tsp salt (I left out the salt)

Preheat oven to 350F degrees. Combine all ingredients until thoroughly mixed. Form into loaf shape and bake for one hour or until done.
