TACO ROLLS

taco rolls

 

This is a must try, mmmm

1 lb ground beef, browned and drained well
1 taco seasoning pkt (or use homemade taco seasoning per directions)
1 can refried beans (fat free preferably)
1 tomato*, diced and seeded, drain as much of liquid out as possible
Cheddar cheese, shredded
Refrigerated canned biscuits, NOT jumbo or Texas sized biscuits

Make taco ground beef per packet directions. Set aside. Preheat oven to 400F. Spray a baking sheet pan. Add ¼ tsp cumin to re-fried beans and adjust for seasoning per taste, stir well. Add ¼ tsp onion powder to tomatoes and gently mix together. Open biscuits and roll to thin circle. Put 1 tsp beans in middle of biscuit and flatten slightly. Top with 2-3 pieces of tomato, 1 tsp cheese and 1 Tbsp taco beef. Pull up sides and close ‘roll’. Place on greased sheet pan, closed side down. Place each biscuit ½” apart. Spray with cooking spray and cook until golden browned, 8-10 minutes. ~enjoy!
*no tomato on hand, use canned diced tomatoes, well drained!*
Servings: 3-4 per person
