Healthy Pumpkin Waffles

Makes 12 Waffles 131 Calories 55 from Fat

Mix together:
1 ½ c. whole wheat flour, 3 tsp. baking powder, ½ tsp baking soda, 1 tsp. cinnamon, nutmeg, ginger, 1/8 tsp. cloves & salt

In separate bowl mix:
4 T. melted coconut oil (cooled), 2 T. molasses, 1 c. pumpkin puree, 1 2/3 c. unsweetened almond milk, 2 large eggs

Pour wet into dry ingredients and combine.

Cook according to your waffle iron directions.

I use EPICURE’S Silicone Waffle mold and bake for 12-15 minutes in a 425 F oven.

*These freeze beautifully and are a quick healthy breakfast in the toaster. High in Calcium, Selenium and Vitamin A
