Kielbasa & Veggie Collision

Kielbasa sausage, sliced
1 yam, diced
1 yellow squash, half & slice
1 zucchini squash, half & slice
1 red bell pepper, sliced thin (any color works)
1/2 white onion, sliced thin (any will work)
1 broccoli crown, cut up
seasonings of choice (used my secret meat rub)
1 tsp. soy sauce
2 Tbsp. garlic olive oil (any oil)
2 tsp. minced garlic

Put oil into large skillet and heat on medium. Add yam and stir to coat well with oil. Start cooking this first while you cut other ingredients up, as it takes them longer to get done. Allow to cook about 10 minutes before adding other ingredients.

After cooking yam for 10 minutes, add other ingredients and stir to combine well.

Turn heat to medium-low and place lid on skillet. Keep an eye on your dish and stir every few minutes.

When all veggies are soft, you are ready to plate and eat!
