Cabbage Roll Soup

cabbage roll soup


8 oz (250 g) lean ground beef
8 oz (250 g) ground pork
3/4 cup (175 mL) uncooked rice
1 onion chopped
salt and ground black pepper to taste
garlic to taste (I use 2 – 3 cloves)
1 tablespoon sweet paprika
6 cups chicken or vegetable soup stock
2 celery stocks sliced
2 carrots peeled and sliced
2 cups water
2 28-oz tins diced tomatoes including the juice
1 (10 ounce) can tomato soup (reduced salt)
Tomato juice (I have used V8)
One medium head of cabbage (outer leaves removed) cut in to bite sized pieces
2 bay leaves


In large bowl, mix together beef, pork, rice, onion, garlic and paprika. Season with salt and pepper. Form into 1-1/2 inch (4 cm) balls to make 25 to 30 meatballs.

Heat a large soup pot over medium heat brown the meat balls all over. Discard grease.

Add the rest of the ingredients and bring the pot to a gentle boil. Reduce heat and let soup simmer until fully cooked.

You can garnish with sour cream. This soup usually tastes even better the next day!!
