Skinny Creamy Cauliflower Soup

skinny creamy cauliflower soup

 

Serves 4 – about 85 calories per serving!

Ingredients:
1 tbsp butter
1 tbsp flour
1 medium head cauliflower, chopped
1/2 cup onion, chopped
1/2 cup carrots, chopped
2 tbsp. minced garlic
4 cups fat free chicken broth
1 tsp parsley
1 bay leaf
salt and pepper to taste

Directions:
– In a large pot, make a roux by melting the butter on low heat. Add the flour and stir about 2 minutes.
– Add all other ingredients, stir, heat to boil, cover, reduce heat and simmer until vegetables are tender.
– Transfer half of the soup to a food processor (be sure not to get the bay leaf!) and puree.
– Pour back into pot and continue to simmer until soup is desired thickness.
– Remove bay leaf and serve.

Optional garnish ideas: sour cream and shredded cheddar cheese
