Tropical Rum Rice Pudding

Serves 8-12
1 box vanilla pudding (fat free)
1 4.5 oz. boxes of raisins
2 slices fresh pineapple (chopped)
2 slices fresh papaya (chopped)
1 tbsp. papaya seeds
2 cups white sugar
1 tbsp. Vanilla extract
1 tbsp. cinnamon
¼ cup light Rum
2 cups Jasmine Rice
1 cup Almond milk
1 cup Half & Half

Cook rice and set aside once done
Chop up pineapple and papaya, add to medium bowl. Add raisins, papaya seeds, Rum, and vanilla, stir and put aside.
Make pudding according to directions using almond milk and half & half, and place in refrigerator to finish setting
In large bowl add rice, sugar, and cinnamon: mix well
Pour in fruit mixture; mix well
Add vanilla pudding and mix well
Pour pudding mixture into casserole dish and bake for approx. 45-55-minutes
Once done let rest for approx. 15 minutes before serving
