chili verde

 

3 lbs boneless pork ribs
1 6oz can tomato paste
1 10 oz can diced tomatoes & green chilies (RoTel)
1 cup water
1 medium onion diced
1 large clove garlic diced
2 tsp Cumin spice
1 tsp salt
1 tsp black pepper

Cut pork ribs into 1 inch cubes and place into large sauce pan.
Add remaining ingredients to sauce pan and cook on medium low
for 1 hr or until pork cubes are done.
Serve on warm tortillas with cheese rolled up. Or use as a base for taco salad.
