2 very ripe bananas, smashed
1 c. peanut butter, creamy or chunky
1 egg, slightly beaten
1 c. Stevia or your choice of sweetener
1 tsp. baking soda
Preheat oven to 350°. Lightly coat baking sheet with cooking spray.
With a wire whisk, thoroughly mix sweetener and baking soda.
Combine egg and bananas well. Add peanut butter to banana mixture and blend very well.
Pour sweetener mix into peanut butter batter. Blend well to get it all thoroughly mixed.
Place by spoonful onto prepared baking sheet, leaving 2″ between each cookie.
Put baking sheet into oven and bake 8-10 minutes. Remove and allow cookies to rest on pan for 2 minutes. Then transfer to wire rack to cool down.
Cookies will be soft and not as thick as regular peanut butter cookies. Great with coffee or milk.
