Chocolate Zucchini Cake/Muffins

chocolate zucchini cake muffins

 
1 c. brown sugar
1 c. sugar
1/2 c. butter
1/2 c. oil
3 eggs
1/2 c. milk
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
4 Tbsp. cocoa powder
3 (6″) zucchini, grated
1/2-1 c. chocolate chips

Preheat oven to 350 degrees.

In large bowl, cream together sugars, butter and oil. Add eggs, vanilla and milk to creamed mixture. Add the rest of the ingredients, except the zucchini and chocolate chips, and mix. Fold in zucchini. Pour into a greased 9×13″ pan or into muffin tins. Sprinkle chocolate chips on top.

If baking as a cake, bake for 40-45 mins. If baking as muffins, bake for 20-25 mins.
