Momma’s Banana Loaf (sugar free)

Ingredients:
2/3 cup unsalted butter, softened
1 cup granulated Swerve or Stevia
2 3/4 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
2 eggs, lightly beaten
1 1/2 cups mashed bananas (about 3 large ones)
1/2 cup light sour cream
1 cup finely chopped walnuts

Directions:
Cream butter with sweetener and beat with mixer at med. speed. Combine flour and next 3 ingredients in a medium bowl, stir well. Combine eggs, mashed bananas and sour cream, stir well. Add some of the flour mixture to creamed mixture, then add some of the banana mixture, mix well after each addition, beginning and ending with the flour mixture. (why? I don’t know!) Stir in the walnuts.

Pour batter into a greased and floured 9x5x3-inch loaf pan. Bake at 325F degrees for 1 hr. and 15 min or until a wooden pick inserted into the center comes out clean. Shield with aluminum foil if it starts to become too brown. Cool in pan for 10 minutes, remove and cool on wire rack. Eat!
