Black Beans & Rice

black beans and rice

 

Serves 6-8

2 TBSP OLIVE OIL
1 YELLOW ONION, diced
1 GREEN PEPPER, diced
2 CLOVES GARLIC, minced
2 BAY LEAVES
1/2 TBSP GROUND CUMIN
1 CUP BROWN RICE
2 (14 oz. cans) BLACK BEANS, drained & rinsed
1 can DICED TOMATOES w GREEN CHILES, drained
1 CUP WATER
2 TBSP APPLE CIDER VINEGAR
2 tsp CAYENNE PEPPER (opt)
KOSHER SALT
FRESH GROUND PEPPER

DIRECTIONS
Heat large pot over medium-high heat, add olive oil. Stir in onions, peppers, garlic, bay leaves, and cumin. Stir and cook for 8 minutes. Stir in the rest of the ingredients, bring to a boil; reduce heat, cover and let simmer 35-40 minutes or till rice is tender.
