1 Tbsp. olive oil
1/3 c. orzo
1 tsp. minced garlic
1 c. white rice
1 can chicken broth
1 c. water
1 box frozen chopped spinach (10 ounces), defrosted & water squeezed out
1 c. cheese of choice
1 small can diced green chiles
Salt & ground black pepper
Put olive oil in pan and add the orzo & garlic. Stir to coat with oil. Allow orzo to brown, about 3 minutes.
Pour broth into orzo and stir. Add rice, water, seasonings, and green chiles. Stir and lower heat to low. Cover and simmer 15 minutes or until rice is done. Keep an eye on pot so rice won’t stick to bottom. If it gets too dried out before rice is finished, just add enough water to finish it off.
Once rice if done, fluff it with a fork. Stir in cheese and spinach. Serve!
