4 large chicken breast halves
4 oz. light cream cheese
1/2 c. mozzarella or cheese blend
1/4 tsp. pepper
12 basil leaves, julienne
8 sun-dried tomatoes, chopped (set a few aside for garnish)
1/4 c. olive oil
1/8 c. balsamic vinegar
1/2 tsp. dried oregano
12 cherry tomatoes, sliced in half
basil for garnish
Preheat oven 400′
Slit chicken breasts down one long side, (for stuffing).
In medium bowl, mix cheeses, sun dried tomatoes, julienne basil and pepper.
Stuff chicken breasts with cheese mixture.
Top with chopped cherry tomatoes. Garnish with some basil and sun dried tomatoes.
Mix olive oil, balsamic vinegar, oregano and pour over top.
Bake 30-40 minutes. We enjoy it with rice and a big salad. It makes an awesome gravy/sauce for rice!
