2 chicken breasts, diced and cooked
2 c. cheese (your choice), shredded
1/4 c. + 2 Tbsp. bbq sauce
1 can mushrooms, drained
1/2 small onion, thinly sliced & halved
2 c. warm water (105° – 115°)
2 Tbsp. dry yeast
2 tsp. Stevia
4 Tbsp. garlic olive oil (any oil)
2 tsp. salt
5 c. flour
Dissolve yeast in water. Let sit 3-5 minutes until foamy.
Add remaining ingredients and mix well. Knead on floured surface 5-6 minutes.
Divide dough into two pieces. Roll into balls and allow to rise in a well greased bowl for 1 1/2 hrs. or until doubled in size.
When dough is ready, roll out on floured surface to the desired thickness you prefer. We like it very thin, so I was able to get a large and a small pizza.
Put dough into desired pan and continue to load pizza up.
Preheat oven 450°.
Spread 1/4 cup bbq sauce over dough. Sprinkle with 1/2 cup cheese.
Mix chicken with 2 Tbsp. bbq sauce. Evenly spread chicken onto pizza dough.
Scatter onions & mushrooms around evenly. Top with 1/2 cup cheese.
Bake in oven for 10 minutes or until dough is done and to your liking.
NOTE: This recipe will make 2 pizzas. I gave directions for one type. You can use the other dough or freeze until another time.
To Freeze: Roll dough into ball. Place onto a baking sheet and freeze. Once frozen, transfer to a zip bag and keep frozen until ready to use.
To Bake: Thaw dough in a well greased bowl approx. 3-4 hrs. Roll out to desired shape. Add toppings and bake as directed above.
Be ahead of the game and make some extra to freeze for those times you are running short on time.
