2 large or 4 small chicken breast
8oz brick cream cheese
2 fresh jalapenos
Cheddar cheese (shredded)
Salt Pepper Garlic powder
1/2 cup brown sugar
1T Chili powder
Preheat oven 400F.
Pound out chicken breast until it is about 1/2-3/4in thick, season with salt, pepper, and garlic on both sides. Combine cream cheese, cheddar cheese, and diced jalapeños together.. Spread on one side of chicken breast. (Do NOT spread all the way to the edge, leave a lil bit of room at the edge) Roll chicken breast into a log. Lay bacon slices side by side slightly overlapping each other, until it is the width of the chicken. Place chicken on top of the bacon and wrap the rest with bacon. Add toothpicks to hold together. Mix brown sugar and chili powder. Add a sprinkle of salt, pepper, and garlic powder. Roll the bacon wrapped chicken breast in brown sugar mixture until it is coated.. Line cookie sheet with aluminum foil. Place a wired rack on sheet, spray with cooking spray.. And bake chicken for 25-30 (depending in size) reduce heat to 350 and bake for an additional 25 mins.. Remove toothpicks, slice and serve.
