Brownie Mint Crinkles

1 brownie mix (I used homemade, but you can use a boxed one)
1 c. flour
1 c. Splenda or sugar, your choice
1/4 c. powdered sugar, for coating
3 eggs
1/3 c. + 1 Tbsp. oil
1 tsp. mint flavoring

Preheat oven to 350 degrees. Coat baking sheet with cooking spray.

Whisk the flour, Splenda, and brownie mix together well. Add in the eggs, flavoring and oil. Mix well to incorporate it all. Mix will seem a bit dry. This is a good time to dig into it with your fingers! (Don’t you like to play with your food?)

Using a small baking scoop, scoop out mix into palm of your hand. Carefully roll into a ball.

Put powdered sugar into a shallow dish. Place balls into powdered sugar and roll to completely coat your cookie ball. Repeat this process until all are done. Place on baking sheet at least 1″ apart. They don’t spread but they do puff up.

If you can not put all onto a pan at one time, DO NOT roll them in the powdered sugar until you are ready to place on baking sheet. Reason for this is because the oils in the cookie will cause the powdered sugar to melt into it. No worries though. This does help to give them a nice little crunch!
