Chicken Cacciatore with Linguine

1 pound of Chicken Breasts ( 2 large ) cubed
1 Tbsp Olive oil
1 c Onion chopped
1 each Medium Red, Green, Yellow, Orange Peppers Chopped into chunks
1 Medium Zucchini ( 8 – 10 in long and 1 1/2 in round) Chopped in chunks
2 cans Stewed Tomatoes ( 14.5 oz)
1 Tbsp Basil
1 Tsp Oregano
1 Tsp Garlic minced
1/2 Tsp Salt
1/4 Tsp Pepper
Grated Parmesan Cheese

Heat Olive oil in large skillet and add Cubed Chicken, Salt and Pepper, Cook till Browned stirring to make sure it does not burn.
Add the Vegetables, Stewed Tomatoes and Seasonings. Stir together and Simmer over Low Heat 30 minutes.
Cook your pasta according to directions.

Serve over pasta of your choice and Sprinkle with Grated Parmesan Cheese. Enjoy!
