1 (3 oz) pkg. sugar-free orange gelatin
1/2 c. boiling water
6 ice cubes
1 c. crushed pineapple, reserve juice
1 c. vanilla Greek yogurt
1 (11 oz) can mandarin oranges, well drained
1/4 c. flaked coconut
Combine gelatin and boiling water in medium bowl, stirring until gelatin is fully desolved. Add ice cubes and pineapple juice, stir until completely melted.
Place in freezer for 10 min. until mixture begins to thicken. Remove and whisk in yogurt until mixed well. Stir in pineapple and oranges.
Spoon into jello mold and place back in the freezer for at least 2 hrs. Slice when ready to serve.
NOTE: Omit coconut & this is only 30.4 calories per serving!
