Roasted Pears with Cinnamon Maple Syrup

Ingredients
2 ripe pears, cut in half (don’t peel) remove cores with spoon
1/3 cup pure maple syrup (I used sugar free syrup)
1 tablespoon fresh lemon juice (or orange juice)
1 tablespoon pure vanilla extract
1 rounded teaspoon ground cinnamon
Chopped pecans to taste

Directions
Preheat oven to 400 degrees. Spray an 8″ baking pan with cooking spray.

Arrange the pears skin-side up in the prepared baking pan. In a separate bowl, whisk together the maple syrup, lemon juice, vanilla, cinnamon. Pour over the pears. Sprinkle with chopped pecans if desired.

Place in the oven and roast for about 20 minutes. Remove pan from oven, use a spoon or tongs to flip the pears, then return to the oven for another 10 minutes.

Serve immediately while still hot with yogurt or vanilla ice cream.
