Lisa’s Pork Chop Bake

pork chops bake


5 pork chops (or the number you need for you fam)
a little olive oil, plus extra to drizzle
Garlic, separated into cloves (unpeeled)
sea salt and pepper

3 tbsp olive oil
1 large onion
1/2 of large yellow pepper chopped
1/2 tsp red chili flakes (or more)
14 oz can crushed tomatoes
1 tsp sugar
sea salt and pepper to taste

Heat oven to 400. Place chops in a large, lightly oiled baking dish and season with thyme, rosemary, garlic cloves, and salt. Drizzle with a little olive oil and bake for 20 min or till the pork chops are cooked through.

Make the sauce while chops are cooking, heat olive oil, add onion, yellow peppers and chili flakes, stir on high for about 3 min until the veggies begin to soften. Pour in tomatoes. season with salt and pepper add sugar and a splash of water. Simmer for about 10 min until onions are tender and sauce has thickened. Taste and adjust the seasonings. Turn

Take chops out of oven and let rest in pan for about 5 min. Then pour any juices into the sauce that are on the chops and reheat. Ladle a generous amount of sauce over chops and serve
