Eggs in Sweet Potato Basket

eggs in sweet potato basket

 

1 medium sweet potato, peeled and shredded
1/4 small onion juiced (Used a micro-plane grater)
3 TBS melted butter
3 pieces of bacon, chopped
2 mushrooms, finely diced
About 7 eggs
Salt and pepper to taste
1. Squeeze the juice out of the shredded sweet potato
2. Combine sweet potato, butter, onion, salt and pepper
3. Press the sweet potato mixture into greased cupcake pan. Make sure the sweet potato is on the sides too. Bake at 350 for 30-40 minutes until the sides are browned.
4. While potatoes are cooking cook bacon and lightly saute mushrooms
5. When potatoes are done put a little of bacon and mushrooms into sweet potato cup (don’t over fill)
6. Place egg in each sweet potato cup and bake about 10 minutes until white is set and yolk is slightly runny
Makes about 7 cups (amount varies on size of potato)
