Roasted Potato Medley with Onions and Garlic

roasted potato medle with onions and garlic


5 med potatoes
1 med sweet potato
1 onion (chopped)
1/2 tbsp minced garlic
1/4 c avocado oil (or olive or vegetable)
Dill weed
Parsley flakes
Salt and pepper to taste


Preheat oven to 350

Peel and chop potatoes into bite size pieces. Bake for about 30 minutes in a 9×13 cake pan (Add a little bit of water and cover with foil.)

While potatoes are partially cooking, sauté the onion and garlic in 1/4 c of oil.
Spoon over the potatoes, sprinkle with spices and bake for another 15-20 minutes uncovered (until potatoes are tender). (You can add a little more oil if desired)
