Seafood Linguine

seafood linguine


2 cups of shrimp (thawed and peeled)
1 cup of scallops (Rinsed)
2 tbsp oil (I use extra virgin olive oil)
2 tbsp of minced garlic
1 tsp of parsley
1-2 tsp of chilli pepper flakes (to taste)
1 pint of cherry tomatoes
1 bag of spinach (washed)
1/2 cup of white wine (I use Jackson’s Triggs dry white)
1/4 cup lemon juice
1/2 cup Parmesan cheese (or to taste)
1/2 to 2/3 package of linguine — (Sub spaghetti squash??)

Heat the oil, garlic and seasonings in skillet, then add shrimp and scallops, sautee until cooked, over medium heat, about 5 minutes (do not drain as this will be part of the sauce). Add tomatoes and cook for another 3 minutes then add spinach and cook for another 2 minutes. Add wine and lemon juice and bring to a boil. Remove from heat. Cook linguine according to package, drain it and put it back in the pot, then add seafood mixture, stir it all together and sprinkle Parmesan over the top. Cover and let stand for about 5 minutes. Serve and enjoy! We usually have ours with Garlic Bread and a Side Salad
