Mom’s Apple Balls (Apple Fritters)

1 Package of yeast
4 cups of all purpose flour
1 tsp salt
½ Sugar
2 beaten eggs
1 tsp vanilla
2 cups of warm milk
5-6 apples cored and cut in pieces.

1 package of yeast – dissolved ½ cup of warm water.

Once yeast is dissolved add 2 beaten eggs, 1 tsp vanilla and 2 cups of warm milk. Mix in dry ingredients and beat well. Let rise for ½ hour or more.

Heat oil . While oil is heating add apple pieces. Drop spoonfuls into oil.

Sprinkle with icing sugar or eat plain.

Variations: instead of apples try peaches or bananas.
