Pecan Pie Muffins

pecan pie muffins
1 cup brown sugar (packed)
1/2 cup almond flour
2 cups chopped pecans
2/3 cup unsalted butter
2 eggs

Mix brown sugar, flour and pecans together in a medium sized bowl.
In a separate large bowl, beat butter and eggs together. Stir dry ingredients
into wet until combined. Batter will be very thick.

GREASE MUFFIN TINS GENEROUSLY or they will stick. I used coconut oil.
Spoon batter into muffin pan about 2/3 full. Bake at 350 degrees F for 16 minutes. Let cool for about 5 minutes, run knife around edges and pop out.

Yields: 12 regular size muffins
