Blend the following in a medium-sized bowl with an electric mixer
on low speed:
1 cup unsalted butter, softened
1 3/4 cups granulated Swerve or Stevia
1 Tablespoon vanilla extract
Preheat the oven to 350F degrees. Grease well a 13 x 9 pan and flour it.
Mix the following in a separate small bowl:
1 cup almond flour
2/3 cup cocoa powder
1/2 cup finely chopped nuts
1/4 tsp sea salt
* Optional — various berries and whipped cream (for garnishing)
Gradually add the dry ingredients into the wet until no cocoa lumps anywhere. (Will be thick.)
Pour into the greased pan and gently spread around with a butter knife trying to get it smooth and even.
Bake for 20 to 25 minutes or until springs back in the center when you gently press down with your finger — do not over bake!
Allow to cool on rack for 5 minutes and then remove to the counter top. Using a heart shaped cookie cutter, cut as many heart “cookies” out of the baked brownie. Put one on the plate, smooth whipped cream over it, top with second “cookie”. Put a small dollop of whipped cream on top, top with a berry of your choice, and drizzle melted chocolate over it. YUMMM!!!!
