SHARE this recipe, these would go great with the Dijon Blackend Chicken!
1 lb Sweet potatoes
4 Tbs Olive Oil ( more if needed)
Salt and Pepper
3/4 cup of Shredded Mild Cheddar
6 slices cooked Bacon (chopped)
1/2 cup Sour Cream
2 Tbs chives(chopped)
Pre Heat oven to 400 °
In a large bowl mix together Sweet potatoes, Olive Oil, Salt and pepper to taste. Mix until coated well.
Place on Rimmed baking pan and bake for 25 minutes.
Top each slice with Cheese , Bacon, Sour Cream, and Chives.
