Cheesy Brussel Sprout Casserole

SHARE because I am sure someone out there eats Brussel Sprouts!

14 oz bag frozen brussel sprouts thawed
1 ½ to 2 Tbsps Roasted red peppers diced
16 oz cottage cheese
4 oz Colby/Jack shredded (your choice)
2 oz sharp cheddar shredded
1 cup milk
1 sleeve round crackers crushed
1 or 2 Tbsp Nutritional Yeast (you can use butter)
Salt and Pepper to taste (1/4 tsp each)

Thaw and quarter brussel sprouts and place in casserole dish
Add cottage cheese, 4 oz cheese, milk, ½ sleeve crushed crackers , nutritional yeast or butter, salt and pepper. Mix all together, add place 2 ozs cheese on top and other half of crackers
Bake at 350 for 35 to 45 minutes or until golden brown. Let sit 5 minutes before serving.
Notes: I don’t measure much, so adjust to your taste. I did spray some pam on top before putting in oven.
