Pumpkin Walnut Cranberry Bread

1¼ cup oat bran
½ cup whole wheat flour
1/3 cup brown sugar
2 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/8 teaspoon salt
1 egg
1 cup pumpkin
½ cup fat free milk
2 tablespoon canola oil
¼ chopped walnuts
¼ cup dried cranberry

Mix together egg, pumpkin, milk, oil, salt, pumpkin pie spice, baking powder until well blended. Then add brown sugar, flour and bran. Mix well then add walnuts and cranberries. Pour into a 9” x 5” loaf pan (spray with cooking spray) bake at 375° for about 30 minutes (until center is clean when knife has been inserted).

Makes 18 slices
