Crock Pot Chicken Tacos!

***The simplest crock pot meal in existence!!!! PUT THESE IN THIS MORNING FOR TONIGHT!

3 boneless chicken breasts
1½ cups favorite salsa
2 tablespoons taco seasoning (my recipe to follow or use store bought)
Put crock pot on low, add chicken breast, seasoning then 1 cup of salsa for 6 hours.
Take a fork and shred chicken and add last ½ cup of salsa and mix.
Heat another 30 minutes to an hour.

Juli’s taco seasoning
1 Tablespoons chili powder
¼ teaspoon cumin
¼ teaspoon onion powder
¼ teaspoon cayenne or red pepper flakes
¼ teaspoon oregano
½ teaspoon garlic

Juli’s Cilantro Lime Avocado Cream
½ avocado
2 tablespoons chopped cilantro
1 good squeeze lime juice (1 teaspoon appx)
2 heaping tablespoons sour cream
1 tablespoon olive oil
Sea salt
2 tablespoons or more water
Blend all ingredients except water, in a mini food processor. Scrape sides and add water 1 tablespoon at a time. Blend and repeat until desired consistency.

Baked Tacos

You’ll need 1 package (10) tortillas
Steam your tortillas…
Place your tortillas on a microwave-safe plate, cover with a wet paper towel and microwave for 1 minute

Bake your tortillas…
Preheat oven to 375 F
Spray each side of tortilla with some cooking spray
Drape each tortilla over 2 bars on your oven rack
Bake for 7-10 minutes or until lightly browned and crispy
Remove and set aside

Taco filling…

You will need>>
1 1/2 lbs extra lean ground beef
1 can mixed beans (did not have refried… This is my change)
1 onion, chopped ( I added this)
1/2 t oil
1- 1 1/2 c herb spaghetti sauce (original recipe calls for plain old tomato sauce)
1 1/2 T homemade taco seasoning ( original recipe states 1 packet)
Shredded cheese… As much or as little as you like

Optional toppings… Green onions, lettuce, sour cream, plain Greek yogurt, salsa… Anything you like but the more you add… The more calories you may be adding! I added 1 T of the plain Greek yogurt to my plate and used it for dipping.

Drizzle oil into pot
Rinse and drain your can of beans… Add to pot
Add the onion
Fry for 5-8 minutes then mash and set aside

Brown the beef, drain off oil
Add the bean mix and taco seasoning, stir till well- blended
Add sauce and stir… Don’t add too much sauce… You don’t want the bottoms of your tacos soggy

Lightly grease your casserole dish
Scoop filling into tacos and place in casserole
Top with cheese
Bake 10 minutes at 375 F

Taco Avocado Bowls

1 lb. Lean Ground Beef (or ground turkey or chicken)
3 Large Avocados
6 Grape Tomatoes
6 Jalapeno Rings
1/2 Cup of Sour Cream
1/2 Cup of Salsa
3/4 Cup Sharp Cheddar Cheese – Shredded
5 Large Romaine Leaves – Shredded

***To season the meat use Cumin, Chili Powder, Onion Salt, Garlic Powder, Celery Salt, and Pepper. You can use a taco seasoning packet.


Cook the ground beef with all of your seasonings over medium-high heat until the meat is cooked all the way – Drain excess grease from the pan

Cut the avocados in half and use a spoon to scoop out the avocado. If you slide a large spoon a long the edges, you should be able to get it out in one piece

In the empty avocado shells, add 1/6 of the shredded lettuce into the bottom of each shell

Next, add 1/6 of the ground beef into each shell
Top each one with cheese, salsa, sour cream, tomato, jalapeno and avocado.
